Melancholia is an open-fermented Saison. One of our favorite stainless-fermented Saisons that we produce. Awesome farmhouse phenolics pair perfectly with the rye and spelt grist. This batch is crisp, effervescent, and refreshing with nice notes of lemon verbena and white pepper.
